Roasted Chicken and Potatoes - a perfect Sunday dinner



I would like to share with you  one of my favourite dish to have on a Sunday.It is easy and fast to get every thing ready.
The oven dose the work for you ,really!
......and it's just delicious!


 
You can make many variations of this dish..you can have pork,turkey,sausages...bacon etc
.I personally like this one the best.

 

What you will need:

6 Chicken  Pieces( not chicken breast)
6 Garlic Cloves, unpeeled
3 Large Potatoes, cut into thick wedges
2 Sprigs of Fresh Rosemary and Oregano
2 Sprigs of Fresh Thyme
3 Tbsp of Olive Oil
Salt and pepper


Get to it!


 Preheat your oven to 180 degrees C.

 In a large baking dish add the cut potatoes,  rosemary , thyme and oregano leaves , garlic cloves, and 3 tbsp of  olive oil.
Season with salt and pepper and toss the potatoes to make sure the oil is coating everything.
 Arrange the chicken in the baking dish around the potatoes and unpeeled garlic(because you are cooking it at high temperature the unpeeled garlic will burn, this way it will be full of flavour  and yummy!)  Bake for about 1 hour to 1 hour and 10 minutes.
Serve right out of the oven and enjoy!

  5. This look delicious! But I have a question about the directions. You don't mention what to do with the thyme or the last tablespoon of oil. I'm also unclear as to whether I'm supposed to leave the herb sprigs whole, or to remove and sprinkle the herbs. Thanks!
