Fairy Lights

I love fairy lights...
there is just something magical about them(not in the way they work..ha!)

the way that it can transform a room...you can put fairy light on an abandoned, demolished building and it will look so romantic and dreamy...

I'm a romantic..I know..
I like them all year round not just for Christmas,
they go perfectly in the summer for that romantic(imaginary) dinner in the garden,a tulle play tent for my girls in their room were we can imagine we are fairies! They would love that!

I used to work as a wedding planner, and after we decorated the venue my favourite part was turning on the fairy lights they just transformed the room, everything looks better in that light...I might just carry them with me wherever I go....no?...to much?ok.

Have a fairy weekend!

PS: I am sooo going to buy me a bike!

Fun lunch - spaghetti and hot dog ....things:)

On my last post, I had some one asking how did I made the fun looking lunch.
So here it is,just for you!:)

First I cut the hot dogs into smaller pieces and threaded uncooked pasta(spaghetti) through the middle of the hot dogs. And then cook them all together for 8 -10 minutes,or until the pasta is cooked.

Then I just served it up on a fun plate with home made sauce.
Emma was very impressed(she is 3):)

Have a fun lunch!

Breakfast for Fathers Day - recipes tried and tested

For Fathers Day we plan to spoil our daddy(my husband that is:)..).
And what a best way to do that then start the day with a delicious breakfast.
So here are some recipes tried and tested by yours truly(yes ,I spoiled my self and the girls every morning with yummy breakfast while my husband had milk and cereals, or toast at 6 AM
.....well,they had to be tested!:)

This is really easy but it looks fancy:)

Using a biscuit cutter or a glass, cut a hole in the centre of a slice of bread.

Melt a bit of butter in a non stick pan over medium low heat, add the slice of bread (with the hole in the centre) and crack an egg right in the centre.

Season the egg lightly with salt and pepper and let it cook for 1 to 2 minutes on each side.
Make sure you also add the piece of the bread that you have cut out, place them in the pan along with the egg in a basket and cook that for the same amount of time.
Serve with some bacon and fresh orange juice!

Lightest, fluffiest pancakes that you will ever eat. We have them all the time in our home, even for desert at dinner time:)
So you my say they have been tested a lot!

Ingredients:

250 grms plain flour
1 tablespoon baking powder
2 tbs sugar
pinch of salt
2 large eggs, slightly beaten
300ml milk
30 gms butter, melted and cooled

Add all the ingredients to a blender and mix until the all ingredients are incorporated,or you can use a bowl and a wisk,it works in the same way, just icorporate the flour as your last step, make shure you don't have any lumps.
I use a ladle to pour . Add a small knob of butter to a frying pan and pour a small amount of batter. Fry on one side until bubbles start to form on the top side.
Flip over and cook the reverse side for less than thirty seconds.

Serve with syrup and  fresh summer fruit!

Note: This recipe made 12 pancakes.
You may need to add extra milk once the batter is sitting for a while as it may become slightly thick.

Ingredients:

1 English Muffins, split
2 Eggs
1 tsp of Distilled White Vinegar
2 Slices of Canadian Bacon
1 Tbsp of Unsalted Butter

For the Hollandaise Sauce:

2 Egg Yolks
1/3 cup of Unsalted Butter, melted
1 ½ tsp of Lemon Juice
salt and pepper to taste

To make the sauce, fill a sauce pan with  water, bring to a simmer on low heat.
Whisk the egg yolks and lemon juice  in a bowl for a few minutes or until they double in size and become pale in color.
Place the bowl with the egg yolk mixture on top of the sauce pan  (make sure it fits)with the simmering water and continuing to whisk constantly and quickly, stream in the melted butter slowly while whisking until the sauce thickens.
Remove the sauce from the heat and stir in the salt and  pepper. .

Fill a  skillet with high sides half way up with water, add the vinegar and bring to a slow boil. (this pan is for poaching the eggs)
Break each egg in a small bowl, than drop each one in the slow boiling vinegar water, cook them for 3 minutes.
While the eggs are poaching, spread a little butter on the cut side of the English muffin, toast them cut side down in a skillet over medium heat and in the same skillet, brown up the Canadian bacon on both sides.
When the eggs have finished cooking, remove them from the boiling water with a slotted spoon and gently dab them on a paper towel to absorb the extra water.
To assemble, place one piece of the English muffin on a plate, top that with a piece of Canadian bacon, place your poached egg on top of that and finish the whole thing off with some of the hollandaise sauce. Most likely you are going to have to thin out the sauce with some of the hot simmering water so keep that in mind and add a teaspoon at a time until you reach a runny consistency.

That's it!
What do you like best having for breakfast?

 Have a wonderful Fathers Day!
Thank you for reading!
