If God is all you have, you have enough!

 
 
When you sit in a hospital bed and can't get up for a glass of water or using the bathroom you realise God is all you have and that is enough.
I was alone for a few weeks in the hospital after my hip surgery.

There was no button to push if I needed anything,I would just pray for someone to pass by my door so I can call out for water or something for the pain or help with my toilet needs.:)
This was in a Romanian hospital, more then 12 years ago.
It was a blessing to be in that situation..depending on God for every little thing,I am so thankful that I kept a journal in that time, so I will never forget that God is faithful, He keeps His word!
I would write down my fears, my pain, dreams about my future, that I will have a family of my own,a husband that would put God first and maybe..just maybe ...kids.:)
I look at my life now and I just can't belive it...God blessed me with more then I ever asked for.
 
 
 
 
There is no grater pain(physical or emotional)that He can not understand!
You may feel lost in the storm and feel there is no way out, the pain is to big...just stop for a minute and know that your God knows you future, He sees things in perspective, you will get through it, hold on to your faith, look up to your God and not what is around you, listen to His word and ...PRAY, pray for wisdom along the way!
 
Stick to God, stay on the right path and blessings are about to come...look for them even in the storm!
 
I am living proof that things do get better.:)

embrace the camera: 30/08/12 -Emma's first day of preschool

Yes.
You read that right.
As much as I tried to stop time and keep my baby a baby...it didn't work.
She grew up and today was her first day of preschool.I was brave and she didn't see me cry...
...I just sobbed in the car...
She loved it!
She is my brave little girl!







She was a bit grumpy in the morning and I tried to make her laugh (I read this on a blog some were and I used the same line)

...she looked confused... she is indeed a big girl

How to host a last-minute get together


 You have a spur of the moment get together with your friends?

Your in-laws just called...they are at your door steps
.....in less then an hour?



Don't panic!I will share with you how you can  pull off a gracious get together in your home using what you already have in your house, with only an hour of notice and with two kids around...a 3 year old and 18 month old.I did it,and so can you!
You may need to pray first!


First things first!

Tidy up!Get a  laundry basket and go throughout the public spaces to gather up all the unnecessary clutter: toys, books etc.Get the kids involved too.
 Quickly clean the bathroom and vacuum the floors and carpets in the rooms that will be used for the event if you need to.
 Remember that your home does not have to be sanitised or clean enough to eat off the floor in order to host guests.If your guests get close enough to notice that your floor isn’t perfectly clean, then they are not  really your friends!



Food.

When I say food I mean appetiser.It would be ideal to have some appetiser staples at all times in  your fridge and pantry...I didn't, just so that this would be helpful   for the worse case scenario too.
Go to your pantry and fridge,see what ingredients you have and plan the menu in your had wile you vacuum.Multitasking !
If you have eggs,boil them now.They need time to cool.You will use them for stuffed eggs.


Here are some quick appetiser ideas:


-stuffed eggs
- tuna sandwiches
-Salmon sandwiches
-egg sandwiches
- cheese sandwiches
- veggie tray & Dip
- crackers,bread sticks,crisps(chips)
-cheese & grapes
-Fresh fruits
-cherry tomatoes,fresh basil& mozzarella  on skewers.
 -bruschetta with goat cheese, pesto and cherry tomatoes,
-cream cheese stuffed pepper
-olives


So here is what I have found in my fridge and pantry:

Now that you are done with your food, empty your sink of dishes.Hide them  wash them .
A cluttered sink can make your whole kitchen look messy.

I still have my kids around...they are busy with a snack and playing with some neon coloured plasters.:)

I have made:

Stuffed eggs with a mix of yolk,cream cheese ,Brussels Pate and a bit of mustard an mayonnaise.
Crisp rolls (brusqeta) with cream cheese,cherry tomatoes and parsley.
Sandwiches with Pink Salmon and mayonnaise.
Crisps with hummus and onions.
Veggie tray
Fresh fruits.

Decor.

Now that your food is done and ready to be placed on the table,take time to place everything together nicely,if you hurry to much it will show,wipe off any spills and make sure all your table wear are clean.
I put the decor  last on the list,but to be honest,to me that is the first thing I think about and do.
You need to be creative with what you have.
Think outside the box.
If you don't have fresh flowers use your pot of parsley or gather some different sized glasses with some candles.It would make a world of a difference to your table setting and to your guests as well.It will show that  you put an effort and  they are important to you
 and that you are way better then Martha Stewart!
Your food can be decor as well.
Instead of using a traditional veggie tray,put your veggies in wine glasses and the dip too.
Or use a pepper to put the yogurt dip in.





Give your veggies a royal treatment and
use a cake stand to display them
and you have your self a pretty  table centrepiece.




It is all in the details.


Paint the foot of the glass with chalk paint and you can write your initial or full name if you need to.
I saw this idea on Pinterest way back ,it is genius,it looks pretty and it's very useful!


Now breathe.
You are done ,with minutes to spare!




 And if all fails remember that an inviting atmosphere and gracious host goes much further than a four-star meal and fancy decor .Smile and they will not notice the mess under the sofa.

Dakos - the best greek invention after the gyros -guest post-

Today I am so exited to have as a guest post a dear friend of mine!
 



Hi everyone!!!
When Erika asked me to write a guest post sharing a recipe, I couldn’t sleep all night!
Yes, I was very thrilled, but in the same time, you need to know a small thing about me: I'm the baby in a family of 8, so you can imagine I never really cooked (I have 6 older sisters for God's sake, why would I want to learn how to cook?).
Recently my husband and I moved to our little apartment and I had no other chance than start cooking. I thank God every day for the time I spent with my mom-in-law in the kitchen while in Roumania, for All Recipe app and for all the other cute sites with easy and quick recipes. :) I enjoy taking pictures, spending time with friends and everything arts & crafts.
I love God and my handsome hubby the most.

I’ll be sharing with you today a recently discovered recipe that makes my mouth water only when I think of it.
We’ll be making Dakos, I think the best Greek invention after the gyros.




You will need:

1 round plain bagel cut in half (I always use 2 slices of homemade bread and it’s delicious);
  • 1 big juicy tomato;
  • feta cheese (grated or crumbled);
  • pepper and basil to taste;
  • olive oil.

What you do:

Toast the bagel (in my case the slices of bread) to be medium dark. Meanwhile the bagel is toasting, cut the tomato in half and grate it with the large-grate of a multi grater in a small ball. Throw away the skin. You’ll have like a juicy pasta.
Spread the grated tomato on top of the toasted bagel, and top it with cheese. Sprinkle with pepper and basil to taste and drizzle with olive oil.
Allow the tomato juice couple of minutes to get in the bagel and then enjoy it!
Be aware: it’s addictive!!
 I made myself some this morning because I just couldn't write about it without having any..

father and daughter date

Emma and her daddy went on a father and daughter date for the first time this past weekend!He took her to the cinema for her very first time to see Brave!It was so special seeing them get ready for each other!She insisted that she would wear a dress!






This would be a family tradition from now on.My husband works from 8 to 5 every day,he doesn't get as much time with the girls as I am.
I took the girls out on dates many times,for my husband it was the very first time,just them two,I was there to take the picture then left  with Hannah to buy her some shoes.Girls!:)
She got a gift too,a Brave puzzle as she loves them and it was the cheapest thing in the Disney shop with Brave on it!:)






It is true,what they say,that a father should hold his daughter’s heart until the day she is ready to give it away to “the one” with whom she will spend the rest of her life. A great way to build this special Father-Daughter relationship is through Father-Daughter Dates.Just one on one time.
I think is best to start young wile they think is so cool to go on a date with daddy...it's a way to built a great bond so you  have a great father- daughter relationship when the crazy teen years come!

Roasted Chicken and Potatoes - a perfect Sunday dinner



I would like to share with you  one of my favourite dish to have on a Sunday.It is easy and fast to get every thing ready.
The oven dose the work for you ,really!
......and it's just delicious!


 
You can make many variations of this dish..you can have pork,turkey,sausages...bacon etc
.I personally like this one the best.

 

What you will need:

6 Chicken  Pieces( not chicken breast)
6 Garlic Cloves, unpeeled
3 Large Potatoes, cut into thick wedges
2 Sprigs of Fresh Rosemary and Oregano
2 Sprigs of Fresh Thyme
3 Tbsp of Olive Oil
Salt and pepper


Get to it!


 Preheat your oven to 180 degrees C.

 In a large baking dish add the cut potatoes,  rosemary , thyme and oregano leaves , garlic cloves, and 3 tbsp of  olive oil.
Season with salt and pepper and toss the potatoes to make sure the oil is coating everything.
 Arrange the chicken in the baking dish around the potatoes and unpeeled garlic(because you are cooking it at high temperature the unpeeled garlic will burn, this way it will be full of flavour  and yummy!)  Bake for about 1 hour to 1 hour and 10 minutes.
Serve right out of the oven and enjoy!

I am freaked out!





My heart aches...my baby girl Emma is not a baby anymore.In less then two weeks she will start preschool.I have to leave her there with some strangers for 3 hours every single day!!
OK,I might exaggerate a bit...but still,I am freaked out!
I mean,in a blink of n aye I will wave her good bay to collage,meet her boyfriend...cry at her wedding!!!!...

OK...I need to breathe and pray!


Time just flew away...I just sow her tinny face for the first time,kissed her little soft and pink cheeks.
And now...she is of to preschool...off to face the big, crazy, beautiful world.







P.S.Yes that is me with dark hair and baby Emma!:)She will always be my baby!

Embrace the camera 09/08/12



Some days are hard.
I feel tiered and uninspired.
I run out of patience and I feel so bad about it.
I'm not perfect!
There's a shocker!.
.
I love nap times,when it's quiet in the house and I have time to just relax for a bit,maybe write a post(like I'm doing now) and just recharge!

Some days are really fun,like this one,were we went in to our favourite park ,all 4 of us!I love weekends,wen my husband is home and we do fun stuff togheter as a family!

Mix all those days togheter and you have yourself a family life.

WIWW- style inspiration

Hello there.
All I have for you today is my style inspiration lately...
I do have to thank Lindsey for this great idea ,because taken pictures of what I wore has helped me define my style.
 I don't find my self buying random clothes anymore that I think there are cute and ending up not liking them after a few days...
I know what looks good on me  and what I really like now....


Have you noticed that Jennifer Lopez kinda' has the same style in her movies...kind of earthy..feminine,bohemian..cool style (I know it's a long name...but I don't know how to describe it in just one word,if you do,please in light me!) Very different from her glamorous day to day diva life.
That is the style that I really like...now.
It my change..
I mean...when I was 16, I wore very baggy Jeans and T-shirts..rapper style (I couldn't rap even if my life depended on it)this was when I waked really funny and I was just trying to hide my legs,my body..everything really.Then...it went in to more feminine..posh kind of style...and now this....earthy thing...I don't really know what I am talking about.


Any way..here is what I'm trying to explain to you guys.



I like Jessica Alba's style too...(yes I  like to go on OMG yahoo to look at celebrity mums ..what are they wearing and doing with their kids...it's therapeutic...don't judge!)
